Natural State
Natural State is our signature natural offering, meant to highlight affordable yet exceptional natural processed coffees. As coffee goes in out of seasons, we will constantly be searching for fresher crops, introducing new “volumes” every 4 - 6 months. Natural State Volume 2 is from the Keramo Daye Bensa Washing Station in Sidama Ethiopia run by brothers Asefa and Mulugeta Dukamo, who serve around 380 smallholder farmers in Keramo, Ethiopia.
WHAT IS NATURAL PROCESSING?
Processing refers to the method a coffee farmer takes to get the coffee from within the cherry to a dried seed that’s ready to be exported to us. Natural processing is the simplest, and oldest processing method. It’s also the longest of the traditional methods, sometimes taking up to 8 weeks! The natural process often results in juicier fruity flavor and acidity, heavier body and sometimes even funky characteristics.
Coffee cherries are picked and left to dry, usually on patios or raised mesh beds.
Drying usually takes 2-6 weeks, allowing for the fruit to have a greater impact on the flavor of the coffee seed over time.
Once fully dried, the cherries are depulped and milled, leaving only the green coffee behind.
The green coffee is then sent to us to roast!

A blend of native Ethiopian Varietals, referred to as “Herloom” Varietals.
Grown at an altitude of 2260 - 2360 Meters (7400 - 7750 Feet)
Harvested from November 2023 - January 2024
