When we had first cupped Nariño Consaca we were searching for a new coffee to use for espresso; on a table of 10 different coffees this one shined the brightest, and we really mean the brightest. We loved Nariño’s bright and almost tropical fruit-like acidity and we had also felt as though Nariño would develop well into a medium roast profile that would still show a lot of character on espresso while still cutting through milk like our Nicaragua La Bastilla Natural, but after roasting 8 different batches to find the right flavor profile, we realized that Nariño had so much to give on the lighter side; Vibrant acidity like apricot, notes of orange rind, sweetness like a golden raisin, and a mellowing milk chocolate body. This was the best representation of what the producers had harvested, and that representation is what we want to share with you all! Nariño Consaca is a fantastic filter coffee offering and we believe that it makes a great espresso as well.
We purchased Colombia Nariño Consaca through Cafe Imports and their regional select program. We love what Cafe Imports is doing with the program, so here’s a little bit about what they have to say about sourcing for this coffee: “The Regional Select program was created to highlight the unique profiles we have found that are inherent to various microclimates in many of the countries from which we source green coffee. Local variables like wind patterns, soil quality, sunlight, elevation, and other environmental influencers have much to do with the common characteristics that separate, say, a Northern Colombian from a Southern Colombian coffee, just as they inform the differences between a Colombian and a Kenyan. For our Regional Select offerings, we source based on cup quality and character, seeking a balance of “taste of place” with availability and price. These lots are built as blends from coffees that cup out between 84–87 on our 100-point cupping scale, and come with regional and often microregional traceability, but are not farm- or producer-specific.” - Cafe Imports
