Felipe Trujillo is an experienced Colombian coffee farmer who got into coffee production after leaving his job as the CEO of an office supply company to help his Father with a coffee farm that they had inherited. Trujillo fell in love with experimenting on fermentation after drawing inspiration from the wine industry. “Black Honey” as he calls it was produced to highlight the acidity and sweetness of the honey processing method using an aerobic fermentation and African raised beds for drying to achieve his goal. Felipe Trujillo produces at his farm “La Ventolera” in Santa Barbara, Colombia at an elevation of 2000 meters (6560 feet) above sea level.
